Summer Functional Food

We don¡¦t have much of an appetite in summer because it is hot and humid. As a result, we like to eat cold dishes on hot days. BBQ¡¦ed and spicy food is more appealing in the summer. Consuming a lot of cold food and drinks, as well as eating a lot of BBQ food results in digestive problems. Bacteria grow very fast in the summer so food can spoil very easily. If we are not careful with our food, we can get food poisoning. Especially, if our digestive system is weakened by all the cold food and BBQ¡¦ed food we ate. There is an old Chinese saying, ¡§Eat turnip in winter and ginger in summer, and you will live a long life.¡¨ It implies that what we eat cannot be too ¡§hot¡¨ nor too ¡§cold¡¨, and it needs to compliment the season. Eating BBQ¡¦ed food in summer is too ¡§hot¡¨ which disrupts the balance of the body. Summer functional food should clear heat, tonify through mild chilling nourishment, and eliminate dampness.

  • Coix seed, Chinese lento bean and Chinese yam (Shan Yao) porridge (speeds up the elimination of dampness, strengthens the digestive system and nourishes the kidney) Cook 1/4 cup of Chinese barley, 1/4 cup of white pea, 1/2 lb. of fresh Chinese yam and 1 and 1/2 cup of long grain brown rice in water over medium high heat for 20 minutes. If you cannot find fresh Chinese yam, substitute with 2 oz. of dried Shan Yao (may be purchased in any Chinese herb store).
  • Barley sprouts, Hawthorne berry, and Turnip Porridge (helps indigestion, strengthens digestive system, and eliminates phlegm) Simmer 1 oz. of fried barley sprouts and 1 oz. of fried Hawthorne berry in water for 10 minutes. Strain and use the stock to cook 1/2 lb. of fresh turnips, 2 tsp. of brown sugar, and 1 cup of long grain brown rice in water over medium high heat for 20 minutes.
  • Goat Milk Porridge (protects the digestive system and strengthens the body) Cook 1/2 cup of goat milk and 1 cup of long grain brown rice in water over medium high heat for 20 minutes.¡ò

An Healthy Perspective of the Vegetarian Food (1)

The vegetarian diet is one that requires more knowledge than meets the eye. In the old agricultural society, vegetarians were common. Eating meat was rare and expensive (Just consider how much feed is necessary to raise one pound of meat). Therefore, in the old society being able to consume meat is a status symbol. But in our society food is so abundant that we eat too much meat. This change has made it ever more important that we discuss the vegetarian diet and its relation to our health and modern lifestyle.

Even though vegetarians were common in the old society, the varieties of vegetarian ingredients are often limited. We don't have this problem now due to improved transportation and agricultural methods. However, that does not necessarily mean that the modern vegetarian dishes are more healthful. To really understand what a healthful vegetarian food is, we need to first address the question, What is health¡¨. A person is considered healthy when he can take care of himself and not cause trouble to others. This simple definition of health embodies two level of meaning: 1) physical health and 2) mental health. The two levels affect each other.

Health from a Senior Perspective

Whenever Mother¡¦s Day in May and Father¡¦s Day in June are upon us, children always wish to take their parents out to dinner. We understand that for the elderly, lightly flavor dishes are easier to digest. However, we also wish at the same time to order lots of food, as well as, the best tasting food fit for the occasion. Unfortunately, most of these foods are heavily spiced meat dishes. Furthermore, eating more is not always healthy. Eating is usually used as a psychological comfort of being young again. So next time when one invites one¡¦s parents to dinner, order plenty but have them eat only a little of each.

We also often would like parents to worry less, rest more and most importantly sleep well. But in reality, most seniors have a symptom that is known in Traditional Chinese Medicine (TCM) as usual weakness of blood and qi (life-force)¡¨. They get tired easily but wake-up as soon as they fall asleep. In another word, without sustained sleep, their bodies do not get sufficient rest and thus never really recover their energy.

Seniors can sleep for another reason: their environment. In senior homes, there is always a strange odor present yet the windows are usually shut. According to TCM, our skin not only breathes but also carries part of the kidney function, which is to expel toxins from our body. In a closed environment, these toxins gather and smell like urine (which is another way of expelling toxins). Yet, because seniors catch cold easily, the windows have to remain shut. So in such damp, smelly, closed environment, seniors often do not get the rest that they need. Therefore, it is very important that workers at senior homes laundry the sheets and open the windows regularly. In this way, the seniors can breath fresh air that helps them rest better and they will also emotionally feel better about their environment and themselves.

Most people believe that when one gets older one's desire will decrease. Actually, the opposite occurs. Why? Because our lives are limited but we are not creative enough to expand our horizon, so we will always hold tightly to the past. Next time one of your parents¡¦ birthday, dress both of them up really nice (best in red) and give them a stem of rose with a box of chocolate. This is the most practical thing to do. The emotions of the elderly really require close and constant attention.

First Look at Health and Food

When it comes to food, people have two choices: 1) food that are easy to digest or 2) food that are hard to digest. Of course the first choice is better because one doesn¡¦t get tired eating it. But most food we eat comes from the second choice. In fact, when we go out and eat, we often have symptoms of indigestion and allergic reactions such as drying of the skin or bitterness in mouth cavity the next day. (For these problems we have a simple solution: stir fry one cup of long-grain brown rice until golden. Add 8 cups of water and simmer for five minutes. Extract the water and add another 8 cups. Simmer another five minutes. Extract the water and mixed with the previous water. This rice water can expel toxins. Its effect is similar using rice paste as a detergent (rice paste was the most economical detergent in old-China)).

Sometimes we over-eat or eat too much heavily spiced and salty food, that our stomach feels uncomfortable. That means our heart has to work harder to provide more blood for digestion and we get tired more. When this happens we also need a solution. The easiest solution is to use Chinese daikon (simply marinate the Chinese daikon with salt, squeeze it a little and then marinate it again with some sugar and vinegar. Eat it like Korean kimchi). Chinese daikon is a digestion aid. In TCM, Chinese daikon is considered to be Cold¡¨. In fact, Chinese daikon counters the action of the ginseng (considered to be Warm¡¨) which excites the heart and moves the chi upward. Chinese daikon, as digestion aid, moves the chi downward and thus can cancel the effect of ginseng. When taken alone without other herbal supplements, however, Chinese daikon can help digestion.

TCM also emphasizes the fact that flavoring of food can create some other physiological effects. For example, eating too much salt can increase osmotic pressure and blood pressure. In this instance, one's urine will increase, mouth will become dry and blood vessels might become damaged; eating too much sugar can also increase osmotic pressure and hence more urine, but it can also increase uneasiness and chances of diabetes and obesity; eating too much spicy food can tire one out easily because spices can over-stimulate the heart. Spices can also damage tendons and cause cramps. Sourness, on the other hand, can help loosen one's muscle (kids who learn kong-fu can drink some apple vinegar to loosen their muscles and joints). However, too much vinegar will damage the stomach because the stomach is already very acidic. As for bitterness, most vegetable and fruits have a bitter component.

According to TCM, the more bitter a food is, the more Cold¡¨ it is. Too much Cold¡¨ food can create indigestion. Finally, when we over-eat, we get a feeling of someone pressing our chest while sleeping. This is caused by too much food in the digestive tract. Eating too much sweet rice often creates this problem. According to Huang Di Nei Jing, the authoritative  bible¡¨ of Internal Chinese Medicine, different flavors can also have different mental effects. Salty foods create nightmares. Sweets make one irritable. Spicy foods make one sad because it damages the lung. Sourness can increase anger. Finally, bitterness makes one fearful. Food also effect dreams. If one has too much toxin in the blood stream, then one dreams about falling into a pond of water. Spicy food creates dreams of flight. If one already has some inflammation and ate some allergen, this will create dreams of fire. If one has high blood pressure and ate a lot of salt, this will create a dreams of upward flight that started out delightful but turned fearful as you move ever faster upward. So, even two thousand years ago, the Chinese doctors already know that a healthful diet must consider the type of ingredients, the meal time, and the serving size.

Introduction to a Healthy Lifestyle

One type of healthy lifestyle is as follow: Eat a big breakfast (one is just revitalized by sleep and so has plenty of energy to digest). Eat a good lunch that emphasizes one protein source (like tofu or chicken) and are accompanies by some vegetables and rice. Eat light dinners (because nights are long and is best for sleeping instead of having wild dreams of flying, fire, or falling).

One of the most basic principles of health is to get a good sleep. Eating well and not sleeping well does not make one healthy. This is because our body constantly degenerates but only regenerates during sleep. Only during good sleep can our body regenerate sufficiently. According to study, a person dreams on average every one and a half hour. Some dreams are remembered but some aren't. If one does remember the dream then it indicates that the person is not sufficiently relaxed. If one does not remember the dream then it shows that one is relaxed enough to tolerate the dream and ignore it.

Breathing fresh air is also a key part to maintaining health. This involves some breathing exercises. Just eating and not exercising is definitely healthy. A walk after a meal not only helps digestion but also help bring fresh oxygen into the blood stream to expel toxins. The best breathing exercise is the deep-breathing exercise such as the deep-abdominal breathing exercise. Deep breathing exercise is so named because it brings the oxygen deep within the organ structure of our body. It is only then that our body can be truly replenished and meet the most basic health requirements.

Basic Requirements and Nutritional View of a Healthful Vegetarian Diet

A healthful vegetarian diet has three basic requirements which we explain as nutrition, oxygen and sleep. These three factors determine both our physical and mental health.

The modern person typically has a body that is not only allergic in nature but also has damp-heat. These bodies tend to become easily inflamed, have high acidity in the blood stream and grow cyst easily. Studies show that this type of unhealthy body type comes from eating too much protein, oil and sugar. Vegetarian dishes can provide nutrients that are more basic in nature and help reduce the chance of cancer.

In discussing healthful vegetarian diet, we start by looking at the nutritional aspect. Just like non-veggie diet, a healthful vegetarian diet is also composed of the five basic categories of nutrients: protein, fat, carbohydrate, vitamins and minerals. Every food has these nutrients. Foods only differ in the ratio of the nutrients. To eat healthy, we must follow the RDA (Recommended Daily Allowances) values and intake the correct ratio of nutrients. The idea is so that we don't only eat one type of food resulting in a nutritional imbalance and an unhealthy body.

Foods can be classified into three types (once they enter our blood stream through digestion and absorption): acidic, basic and neutral. Acidic foods contain sulfur and phosphor whose final form in our blood are sulfuric and phosphoric acids, both of which are powerful acids. These foods typically are rich in protein. Examples are nuts, prunes, cranberries, asparagus, corn, peas, walnuts, peanuts, and peanut butter. Mayonnaise, meat, fish, egg, fowl, and cheese are also acidic foods.

Basic foods are exemplified by sour vegetables and fruits that contain potassium, calcium, and magnesium whose final forms are oxygen compounds that are basic in nature. The interesting thing is that these foods taste acidic but are basic once it enters into our blood stream. Take orange for example. It taste very acidic, yet its end product is not acidic in nature. Therefore, don't be fooled by the taste. This is a very important point in learning the nutritional view of food. Other examples of basic foods are most vegetables and fruits, milk, tofu, soybean, kelp sprout (interestingly dried sea weed is acidic in nature). Cranberry, though a fruit, is acidic in nature. So even though, it is popular right now to drink cranberry juice to help urination, remember that too much will create a acidic body type and increase the chance of cancer growth.

Neutral foods do not contain sulfur, phosphor, potassium, calcium or magnesium and therefore do not produce acidic or basic forms in our blood. Examples of neutral foods are cow and pig fat, sugar, olive oil, tea and coffee.

After understanding the above three types of foods we can understand why a vegetarian diet is so important in our daily lives. If we eat lots of meat during the day, we should eat lots of vegetables in the evening to balance the acidity created in our blood.¡ò ¡@

 Fruit Tofu Pie

Ingredients: A. Fruit¡Gpineapple or banana 5 oz
B. Soft tofu 1 piece (16 oz) C. Pie crust 1

D1. Maple syrup

1/3 cup

D2. Vegetable oil

1/3 cup

D3. Ginger juice 1 tsp. D4. Vanilla extract 2 tsp.
D5. Lemon juice 2 tsp. D6. Corn starch 3 tsp.
Procedure: 1. Liquefy fruit with a blender, put aside.
2. Liquefy tofu with a blender; then mix in ingredients D1~D6.
3. Mix in the liquefied fruit, pour into pie crust.
4. Preheat oven to 375 ¢XF, bake pie in middle rack for an hour.
5. Let pie cool, then refrigerate. Serve cold.
