Nowadays, people are more health conscience and willing to spend more effort to maintain a healthy lifestyle.  A healthy lifestyle consists of eating well, exercise, and keeping a relaxed mind.

Talking about eating well, the first thing that comes to mind is a vegetarian diet.  Vegetarian diet has become a hot topic and salad bar has become a trendy dining out place.  Although a vegetarian diet is a good starting point, it does not automatically equate to a healthy diet.  You still need to watch out for when you eat, what you eat, and how you prepare your food.  While some of the theories discussed here are of special interests to vegetarians, most of them apply to any healthy diet.

Good Eating Habit

Entering college started our first opportunity for full-time free feeding, the traditional three-meals-a-day pattern is immediately broken and mealtimes shift to accommodate career demands and social goals.  Since then, our schedule just grew busier. In order to fit everything into our busy schedules, we try to stretch our day by staying up late and then waking up at the last moment possible.  There is no time for breakfast, and lunches are often eaten at the desk.  After a long day of work, a relaxing dinner is called for.

Our eating schedule does not get better after we get married and have a family. With more working mothers and single parents, regular mealtimes and early dinner become more of an exception than the rule of the family.  Kids have to rely on several snacks during the day to last them till a late dinner.  Families eat out more often and depend more on convenience food and takeout meals.

This eating schedule has a negative impact on our health.  Digestion is hard work; our body needs to spend a lot of energy to turn food into nutrients that our body could use.  Have you ever lost your appetite when you are sick?  Losing appetite is our body's defense mechanism to reserve energy to fight disease.  Have you ever feel sleepy after a big lunch or have trouble sleeping after a heavy dinner?  So eating a big dinner late not only impact our digestion and our body's ability to absorb food but also impact our ability to get a good night of sleep and to obtain adequate rest. 

Good healthy eating schedule:

Breakfast.  We should try to provide our body with energy and nourishment for the entire day of work ahead of us.  We can enjoy eating anything to our hearts desire as long as we still observe the basic rule of a healthy diet: moderation, variety, and balance.

Lunch.  We need to be a little more careful with our lunch.  We should limit our protein to one single source, if we are having a tofu dish, then don't have a legume dish at the same time.  One single protein source is easier to digest than a combination of different protein sources.  We can achieve variety by eating different sources of protein on different days.

Dinner. After a day of work, our body is tired and is in no position to digest a heavy meal. Of the three major food groups, protein is the hardest one to digest so it takes the longest time and most effort from our body to digest.  So dinner should be light, and preferably only grains and vegetables.  This way, we could have a good night of sleep.

Maintaining this schedule is not easy and will require some adjustment, but the result will definitely worth the trouble.  One suggestion is to try to prepare the dinner as normal, but save it for breakfast (or at least do all the preparation work).  Then fix something simple for dinner.  When we wake up in the morning, a good breakfast will be ready very soon so we could beat the rush.

You are what you eat

It is not just a catchy phrase.  The food we eat does have a big impact on our health. Food provides our body with nourishment and energy.  However eating too much of the wrong kind of food could cause health problems.  The correlation between cholesterol and heart diseases, obesity and diabetes, salt and high blood pressure are well documented.

The most fundamental rule of a healthy diet is moderation, variety, and balance.  Moderation in fat, sugar, and salt consumption is an absolutely must.  Eating a variety of food ensures our body getting all the minerals and vitamins essential for our health.  A balanced diet is maintained by eating the correct proportion of carbohydrate, protein, and fat.

Carbohydrates

The bulk of the food we eat should come from group 1 and group 2.  These are food rich in carbohydrates and fiber.  55% to 60% of our calorie intake should come from carbohydrates.  Good source of carbohydrates includes wild rice, long grain brown rice, whole wheat, oat, barley, corn, and oat bran.  Eating grain is better than processed food like bread, it is easier to digest and contain fewer calories per volume.

Fruit and vegetables not only is a source of carbohydrates, they also are good source of fiber, minerals, and vitamins.  Fruit and vegetables also add variety and make our diet less boring.

Sugar, often refer to as empty calories, is not a good source of carbohydrates because it contains no minerals, vitamins, or fiber.  Most people like the sweet tastes of sugar, so sugar is added to drinks, cakes, and a lot of other foods that we eat.  Unknowingly, we are eating a lot of sugar.

Protein

As a general rule, the diet consumed by most people in industrialized societies is high in meat, eggs, poultry, seafood, and other animal products, actually provides more protein than is needed.  Because many high-protein foods are also high in fat and calories, this kind of diet can promote overweight.  It can also impose extra work on the liver and kidneys, which must get rid of unused and potentially toxic parts of the protein molecule.  Vegetarian protein source are healthier source of protein, but most are still high in fat and calories (seeds and nuts contains large quality of oils).

Since we are eating more protein than is needed, the only causes of malnutrition are problem with digestion and absorption.  When our body is tired or weakens by diseases, digesting and absorbing proteins becomes more difficult.  During these times, the proteins we eat need to be easily digested and readily absorbed by our body.  Soybean and brown rice milk is an excellent source of easy to digest protein.

Vegetarians should understand the concept of complementary proteins.  No single vegetable contains all the essential amino acids.  Essential amino acids are the fundamental protein molecules that our body cannot manufacture by itself; we need to get them from the food we eat.  Fortunately, all plant foods are not low in the same amino acids.  Thus, by combining plant foods that is low in different essential amino acids.  Two incomplete proteins that compensate for one another's shortfalls in this way are called complementary proteins.  One example is soybean and brown rice; together this provides all the essential amino acids needed.

Fat

Although some fat is essential. Only a very small amount is needed to meet basic nutritional needs.  Most sources of protein and carbohydrate also contain at least some fat, so we could easily meet the fat requirement without adding any fat to our diet.  However fats add flavor, aroma, and texture to the food we eat.  A fat-free diet would be extremely limited and boring.  As a result, we are eating a lot more fat than we realize.  We won't go into detail here, but there are strong correlation between a high fat diet and heart diseases.  A low fat diet is a necessary component of a healthy diet.  Unsaturated fat does less harm to our body than saturated fat.  If we cannot eliminate fat from our diet, at least replace saturated fat with unsaturated fat.

No more that 30% of our calorie intake should come from fats, and no more that 10% should come from saturated fats.  We need to be careful with this number; it is not 30% by bulk.  A small amount of fat contains a large quantity of calories.  One tablespoon of butter contains 100 calories that is almost 10% of a 2200 calories diet.  In a day, we should not eat more than an equivalent of 3 tablespoon of butter. 

Preparing you favorite dish

Cooking makes food save to eat, taste better and easier to digest.  However if we are not careful, the process of food preparation could add too much salt, fat, or sugar to our diet.  How we prepare our food makes a whole lot of differences in how healthy our diet will turn out.  For example, a salad loaded with dressing might contain a lot more fat than we are aware of.

The healthiest way to prepare vegetable dishes is by steaming.  Steaming does not add any other substance to the food itself so it tends to retain the natural taste of the vegetables better.

Stir-fry is another good way to prepare our food provided we limit the amount of oil we use.  We should also be more selective on the kind of oil we use.  We should stay away from saturated fat (lard, margarine, butter, animal fat, and coconut oil).  Olive oil, mono-unsaturated fat, will be the best choice, otherwise use corn oil and safflower oil, both are poly-unsaturated fat.

Deep fry is not a healthy way of cooking.  Food prepared by deep frying it not only contain a high quantity of fat, the high temperature could also cause chemical reaction in the food producing chemicals that are harmful to our body.

We should also limit the amount of salt we put in while preparing our food. One trick is to use sea salt instead of table salt; the impurities in sea salt will make the food taste saltier with fewer amounts.

Evergreen Healthy Vegetarian Association has created tasty recipes that strictly control the amount of salt and oil used.  It might take some getting used to, some tuning of our taste buds, but it is not impossible to eat healthy and still enjoy good tasting food. ¡ò
